Who is Viki Kappel Spain?
Viki Kappel Spain, M.Ed., is an all-agency camp food service consultant and an active member in the Northern California Section of ACA. She cooks, trains, and does consulting work for camps all over the US, and has been cooking in the camp industry since 1985. Her newest “101” book, “101 Camp Vegetarian, Vegan, and Other Special Diet Recipes,” is planned for a release in 2012. Her other books, 101 Camp Recipes, 101 Camp Cooking Tips, and Food Service Manual: Lessons in Group Food Service, are also available at the ACA Bookstore.
Spain also authored and self-published the popular The Camp Kitchen Guidebook, and is listed as a contributing writer of several published articles in the camp industry, including pieces in ACA’s Camping Magazine, CampParents.org magazine CAMP, and Christian Camping International’s Journal.

Because of an article, “Kids and Healthy Lifestyles,” in 2006, Spain and her co-authors received the Golden Quill Award by ACA.
Viki was asked to write the food service chapter for the Outdoor Ministries Administrative Manual, and has been interviewed and quoted for several news articles on camp food service, including the 2005 Associated Press story, “Summer Camps Cleaning Up Menus”; the Church Mutual Insurance Company’s Risk Reporter; and she was interviewed on National Public Radio. Viki is a regular presenter at regional, local, and national conferences on food service issues related to camps and conference centers, she has served on the ACA Camping Magazine’s Editorial Advisory Committee, and has received a National Service Award and the Paul Somers Award for establishing and contributing to food service conferences in many ACA regions.
Spain is an Associate Standards Visitor for the Northern California ACA Region, and serves as a food safety resource person for the section, speaking at Legislative conferences, coordinating with local and state environmental health officials. Viki is a Certified ServSafe instructor through the National Restaurant Association, and offers the federally-mandated 8-hour food manager training course in any state. She now conducts the California-mandated Food Handler certification class, as well.

She also teaches English and Culinary Arts at the middle and high school levels, having received her Single-Subject teaching credential, a Career Technical Education credential, and a Masters degree in Education specializing in cross-cultural teaching.
